Cucumber Roll Ups
INGREDIENTS:
1 - 2 large cucumbers sliced lengthwise
1 ½ cups boursin-style cream cheese
8 oz sliced deli-ham
8 oz sharp cheddar cheese (sliced into sticks)
Boursin-Style Cream Cheese Mixture
4 oz unsalted butter (room temperature)
8 oz cream cheese (room temperature)
1 1/2 Tbsp freshly grated Parmesan Reggiano cheese
1/2 Tbsp fresh dill (minced)
1/4 tsp dried marjoram
1/4 tsp dried basil
1/4 tsp fresh chives (minced)
1/4 tsp freshly ground black pepper
1/8 tsp dried thyme
1 Tbsp fresh parsley (minced)
Salt and pepper to tast
DIRECTIONS:
Cream Cheese and butter should be at room temperature
Add dry herbs/spices to cream cheese/butter mixture
Slice cheddar cheese slices into sticks
Slice deli-ham to fit into rolled up cucumber slices without sticking out once rolled up
Using a mandolin (or vegetable peeler) slice cucumbers thin lengthwise
On each cucumber strip, spread at least 1 Tbsp of the Boursin-style cream cheese mixture starting 1/2” in from the end of the cucumber slice. Then place 1-2 strips of ham on top of the cream cheese mixture and a few planks of cheddar cheese.
Roll up each cucumber slice. End the roll with the portion that you left the 1/2” without cream cheese and secure with a toothpick or a canapé pick.
Chill at least an hour prior to serving.
Note: if you have any cream cheese mixture left over … it’s great on bread or toast!
