Yorkshire Pudding
Yorkshire pudding is a traditional English side to a Sunday beef roast. In the US this can be referred to as popovers, but delicious just the same.
INGREDIENTS:
3 eggs beaten
1.5 cups whole or 2% milk
1 tsp Himalayan pink Salt
1.5 cups all purpose flour
1 cup rendered beef fat
DIRECTIONS:
Preheat oven to 425 degrees Fahrenheit. (ensure that the oven reaches this temperature before placing muffin tin into oven)
Remove eggs and milk from refrigerator to reach room temperature
Pour 1 tsp rendered fat into each muffin tin, basting the sides of the tin
Combine eggs, milk, salt, and flour in a mixing bowl and let come to room temperature
Place muffin tin in the oven for 10 minutes or until rendered fat begins to bubble
Remove muffin tin from the oven and pour batter into muffin tin, filling each depression halfway with batter
Place back into oven for 30 minutes and watch the magic happen as it begins to rise
Do not open the oven during baking, as this could cause the Yorkshire puddings to “fall”
Puddings are done when they turn a golden brown
Serve with onion or beef gravy next to the roast
