Watermelon & Feta Bites
A great summertime appetizer utilizing slices of ripe watermelon, sandwiched feta cheese slices, and topped with fresh blackberries, arugula, and pine nuts then drizzled with balsamic glaze.
INGREDIENTS:
Ripe Watermelon
1 package of Feta Cheese
1 package of Arugula greens
1 small package of Pine Nuts
1 package of ripe Blackberries
Thick balsamic vinegar as a finishing drizzle (I use Spice Horizon Cask Aged 25 as a premium thick balsamic glaze)
DIRECTIONS:
Slice watermelon into 1” thick pieces, then cut them into 2” squares
Slice block of Feta cheese into 1” thick pieces, then cut them into 2” squares
Place one watermelon square on serving tray, top with feta cheese slice, then add another watermelon square.
Top the watermelon sandwich with a few Arugula leaves, a couple of ripe blackberries, a few pine nuts, then drizzle with balsamic glaze.
Repeat as many times as appetizers you wish to serve. Simple
