Tandoori Prawns
INGREDIENTS:
1 lb large shrimp, shelled and deveined (but leave tails on)
1/4 cup olive oil (for basting)
1 Tbsp olive oil (for marinade)
1/3 cup plain Greek yogurt
1 tsp garlic, minced
1/2 tsp Garam Masala
1/4 tsp chili powder
2 Tbsp lime juice, freshly squeezed
1/2 tsp Himalayan Pink Salt (fine grind)
1/4 tsp Turmeric
Parsley or cilantro to garnish
Bamboo skewers (soak in water for 1 hour before using)
DIRECTIONS:
For the marinade, mix Plain Yogurt, Garlic, Garam Masala, Chili Powder, Lime Juice, 1 Tbsp Olive Oil, Himalayan Pink Salt, and Turmeric in a mixing bowl.
Add shrimp to marinade and mix, cover with plastic wrap and refrigerate for an hour or two
Thread shrimp onto the bamboo skewers, once through the tail and once through the body
Grill the shrimp on both sides (basting on both sides with oil) until they are fully cooked and slightly charred.
Remove from the grill, squeeze additional lime juice on the shrimp, garnish with chopped Parsley or Cilantro and serve.
