Sweet Chili-Pineapple Sauce

Once you try this simple homemade Sweet-Chili sauce recipe, you’ll never buy a grocery store bottle sauce again. This is a complexity of sweet and heat. Great for dipping fried shrimp, calamari, or grilled meats.
INGREDIENTS:
- 1 1/2 cups white granulated sugar 
- 1 cup pineapple juice 
- 1/2 cup rice vinegar (or Apple-cider vinegar) 
- 1 Tbsp garlic, minced 
- 1 1/2 Tbsp red chili flakes 
- 1 tsp kosher sea salt 
- 2 Tbsp cornflour 
- 4 Tbsp cold water 
DIRECTIONS:
- In a large Dutch oven over medium-low heat, add sugar, pineapple juice, vinegar, and salt. Bring the mixture to a boil. 
- Add chili flakes, minced garlic and boil on medium-heat (5 mins) 
- Mix cornflour and cold water together. Lower the heat and stir in slowly, try to avoid lumps 
- Cook the mixture on low-heat until it thickens and comes to the desired sauce consistency. The sauce will further thicken after it cools. 
- Pour cooled mixture into a sterilized jar and refrigerate.
