Southern Sawmill Sausage Gravy

A traditional rich and flavorful Southern sawmill gravy. Serve hot over biscuits to delight your family and guests.

Servings: 16 (4 cups)

INGREDIENTS:

  • 1 pound good quality ground breakfast sausage

  • 2 Tbsp unsalted butter

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • 1/2 cup all-purpose flour

  • 1 cup clear chicken broth

  • 3 1/2 cups whole milk (or more if needed)

  • Kosher sea salt, to taste

  • Black Pepper, freshly ground, to taste

  • Hot pepper sauce, to taste

 

DIRECTIONS:

  1. Add sausage to a large cast iron skillet over medium-high heat. Cook and stir, breaking apart the sausage until it is thoroughly cooked and starting to crisp (5 - 7 mins)

  2. Add butter, onion powder, and garlic powder, and stir until the butter is melted

  3. Sprinkle the flour over cooked sausage and butter, and stir until fully combined.

  4. Reduce the heat to medium, and cook until thickened (2 mins)

  5. Pour in the chicken broth, scraping up any crispy brown bits from the bottom of the pan (that’s where the real flavor is). Simmer until the stock is absorbed and the mixture is thickened (another 2 mins).

  6. Stir in the milk until the gravy is hot and bubbly

  7. Season to taste with kosher sea salt and freshly ground black pepper. If the gravy becomes too thick … thin it out with a little more milk.

  8. Finally, add a couple of dashes of your favorite hot pepper sauce to kick it up a little (optional)

  9. Serve over biscuits for a delicious and hearty meal.
