Chipotle Chile flakes are jalapeño peppers that have been smoked and then dried.  Full ripening gives these Morita chiles a unique, medium-hot, smoky flavor which is very popular in Southwestern cuisine.  The word ‘chipotle’ translates to ‘smoked chile’.
