Quiche (bacon, onion, leek and cheese)
INGREDIENTS:
- 1 9-inch frozen pie pastry
- 1 sweet onion, diced
- 6 tomato slices (optional)
- 3 eggs, beaten
- 1 Tbsp Spice Horizon Olive Oil
- Drizzle Spice Horizon Olio d'Oliva (infused with garlic, rosemary, parmesan cheese and pepper)
- 1 pinch grated or ground Spice Horizon nutmeg
- ¼ tsp fine grain Spice Horizon Himalayan sea salt
- ¼ tsp freshly ground Spice Horizon black peppercorns
- 1 cup whole milk
- ½ cup half and half
- 6 slices thick cut bacon
- ½ leek, thinly sliced
- 1 Tbsp all-purpose flour
- ¾ cup shredded swiss cheese
- ¾ cup shredded gruyere chees
DIRECTIONS:
- Preheat oven to 425 degrees F.
- Place thawed pastry in pie dish, crimping the edges and use a fork to prick the bottomof the pastry (every few inches) to avoid trapped air to create a bubble.
- Line pastry shell with aluminum foil and bake for about 8 minutes.
- After 8 minutes, remove the pastry shell from the oven and remove the aluminum foil. Brush the pastry with a very small amount of olive oil. Return to the oven for an additional 5 minutes, until the crust is dry.
- Remove from oven and reduce the oven temperature to 325 degrees F.
- In a heavy skillet, cook bacon until crisp. Drain the bacon and reserve about 2 Tbsp of drippings. When the bacon has cooled, roughly chop the bacon and set aside.
- Place the reserved drippings in the skillet and sauté the onions until translucent, then drain.
- In a large bowl, mix the milk, half and half, salt and eggs together. Stirring in bacon, leek and onion.
- In a separate bowl toss the shredded cheese and flour together. Then add the egg mixture ensuring that it is mixed well.
- Pour the egg mixture into the pie crust
- Place sliced tomatoes on the top of the pie (optional)
- Cover the edges of the pie crust with aluminum foil to prevent burning. The foil can be removed the last 10 minutes of baking.
- Bake in a pre-heated oven for 35–40 minutes, or until a knife inserted into the center of the quiche comes out clean.
- Let quiche stand for about 10 minutes before slicing and serving. Before serving, drizzle with Spice Horizon infused garlic, parmesan cheese, rosemary and pepper olive oil.
