Pistachio-Grape & Goat Cheese Bon Bons
INGREDIENTS:
1/2 cup shelled, salted pistachio nuts (finely chopped)
6 oz goat cheese, room temperature
2 ounces cream cheese, room temperature
50 ripe green grapes
DIRECTIONS:
Bring goat cheese and cream cheese to room temperature
Toast pistachio nuts in a small skillet over medium-heat until fragrant (about 3 minutes), then finely chop
Combine goat and cream cheese in a medium bowl and refrigerate for 15 minutes.
Form cheese mixture around each green grape, then roll into chopped pistachios, pressing to ensure the nuts are firmly imbedded into the cheese
Refrigerate until ready to serve, but not more than a few hours to ensure that the nuts don’t get rubbery.
