Caprese Skewers

A creative adaptation of an old favorite Caprese Salad using cherry tomatoes, marinated mozzarella balls (bocconcini), and fresh basil leaves on a bamboo skewer.

INGREDIENTS:

  • 12 bamboo skewers

  • 36 cherry tomatoes

  • 24 mozzarella (bocconcini) balls

  • 36 basil leaves (small)

  • 1 clove minced garlic

  • Kosher sea salt

  • Freshly ground black pepper

  • 2 Tbsp balsamic glaze

  • 1/4 cup Extra Virgin Olive Oil

  • 1/2 tsp dried Basil

  • 1/2 tsp dried Oregano

  • 1/2 tsp dried Thyme

  • 1/2 tsp dried Marjoram

  • 1/2 tsp dried Rosemary

DIRECTIONS:

  1. Combine Extra Virgin Olive Oil with the Basil, Oregano, Thyme, Marjoram and Rosemary and stir to combine. Let marinate in the refrigerator for at least 30 minutes or up to 24 hours.

  2. Wash tomatoes and basil leaves and gently pat dry.

  3. Slide a cherry tomato on each skewer, followed by a basil leaf, a mozzarella ball, another basil leaf and another cherry tomato.

  4. Placing the skewers onto a platter, then drizzle 1 Tbsp EVOO marinade over each skewer.

  5. Just before serving, drizzle balsamic glaze over each skewer, then season with kosher sea salt and ground pepper
