Bacon Wrapped Shrimp

 

Everyone likes shrimp and wrapping it in bacon makes it even more resizable. An excellent appetizer for parties.

INGREDIENTS:

  • 1 lb medium shrimp (about 20 shrimp - leave tails on)*

  • 7 slices of bacon (cut into thirds)

  • 20 wooden toothpicks (to keep bacon in place while baking)

  • 4 Tbsp salted butter, melted

  • 2 Tbsp Bourbon Maple Syrup (or just plain maple syrup if you can't find the Bourbon variety)

  • 1 Tbsp chili powder or Chipotle chili powder

Note: Leaving the tails on allows guests to have a built-in handle in which to hold the tasty shrimp, but can be removed if this puts you off. Toothpicks can be used if you don’t want the tails on.

DIRECTIONS:

  1. Preheat oven to 400° F

  2. Line a baking sheet with parchment paper

  3. Wrap shrimp with 1/3 slice of bacon and secure with toothpicks

  4. Place shrimp on parchment paper and leave space in between them so that the heat can crisp the bacon

  5. In a small mixing bowl combine melted butter, maple syrup and chili powder

  6. Brush the shrimp with about 1/2 of the butter/syrup/chili powder mixture

  7. Bake for 15 minutes until the bacon begins to caramelize. Depending on how thick your bacon is, you may need to bake a few minutes longer.

  8. Remove from oven and flip each bacon wrapped shrimp to the other side

  9. Place back into the oven on the broil setting for about 3 minutes more. If not done enough for you, flip again until it reaches desired doneness.
