Marinated Feta Cheese Cubes

A Mediterranean staple. Feta cheese cubed and marinated in extra virgin olive oil and herbs. Can be used as a spread on bread or an addition to salads, a charcuterie plate, or just to eat as a snack.

INGREDIENTS:

  • 1 1/2 cups extra virgin olive oil

  • 1/2 tsp Telicherry black peppercorns

  • 1/2 tsp red peppercorns

  • 1/2 tsp red pepper chili flakes

  • 3 cloves garlic, minced

  • 2 Fresno or chili peppers sliced

  • 2 Tbsp fresh oregano, chopped

  • 2 Tbsp fresh rosemary, chopped

  • 2 Tbsp fresh thyme sprigs

  • 8oz block of feta cheese, cut into 1/2” cubes

DIRECTIONS:

  1. Combine extra virgin olive oil, black and red peppercorns, red pepper flakes, garlic, chopped peppers, oregano, rosemary, and thyme. Microwave mixture on high for 60 seconds.

  2. Let stand and cool for 10 - 15 minutes

  3. Cut feta cheese block into 1/2” cubes and place into the cooled olive oil mixture. Be careful not to stir, as it can break up the feta and make the oil cloudy.

  4. Cover and refrigerate over night

  5. Spoon carefully into serving jar or bowl

  6. After using all of the feta, the reserved oil and herb mixture can be used as a great salad dressing.
